Ingredients

  • 2 lb chuck roast
  • 1 onion, sliced
  • 3 garlic cloves, smashed
  • 1/2 cup beef broth
  • 1/4 cup balsamic vinegar
  • 1 tbsp tomato paste
  • Salt and pepper

Prep steps

  1. Sear roast until browned on both sides.
  2. Add onion, garlic, broth, balsamic, and tomato paste.
  3. Cover and simmer 2-3 hours until shreddable.
  4. Shred and return to the pan juices.

Storage notes

Store with cooking liquid for moisture. Freeze in 1-2 cup portions.
